Fresh Summer Salads For Quick And Easy Meals

For those hot summer days when you really don’t want to cook, try these easy summer salad recipes. Made with fresh and natural ingredients, these quick summer salad ideas make flavorful summer meals in minutes. Each recipe makes 2-3 servings.

Cold Chicken Salad with Guacamole Cream: You will need 3 cups cooked and diced chicken (you may use your favorite kind like grilled, barbecued, roasted, broiled, etc), 1 tbsp capers, 1 cup chopped celery, one-half cup of refrigerated or frozen guacamole (if using frozen guacamole, defrost ahead of time), and one-half cup sour cream. In a mixing bowl, combine the chicken, capers and celery. In a smaller bowl, combine the guacamole and the sour cream and mix well. Add the guacamole cream to the salad ingredients and toss thoroughly. If you want to turn up the heat in this chicken salad, simply choose a spicier guacamole and if you want it a little creamier, add more guacamole or sour cream or both. To Serve: For a quick meal recipe, try this simple chicken salad served on a bed of seasoned rice or fresh salad greens with apple slices on the side.

Cottage Cheese Salad: In a mixing bowl, combine one 16 ounce container of low-fat cottage cheese, 1 cup chopped marinated artichoke hearts (drained), one-quarter cup chopped sun-dried tomatoes in oil (drained), and one-quarter cup finely diced oil-cured black olives, mixing until fully combined. To Serve: Scoop salad over cold cooked and cubed potatoes with some roasted vegetables from the deli on the side.

Kiwi Mango Salad with Almonds: You will need, 3 medium kiwis (skin removed and cubed), 1 large mango (skinned, seeded, and cubed – you can also use frozen mango pieces (one and a half cups) – just thaw first), 1 cup jicama (skinned and diced), and 2 tbsp sliced almonds. In a mixing bowl, combine all the salad ingredients and toss well. To Serve: – Spoon this quick salad into a bowl over some plain low-fat yogurt. Serve along with cinnamon pita chips or cinnamon graham crackers or toasted cinnamon bread with cream cheese spread.
