Serve Corn Fritters To Win Over Your Finicky Eaters

Serving vegetables to kids isn’t always easy, or successful. It often takes some tricks or disguising to get kids to eat their veggies. A simple trick in our house is turning plain old corn into tasty Corn Fritters. Without a doubt, we’ve found that this ordinary vegetable can become something wonderfully delicious with very little effort.

An easy Corn Fritters recipe that requires just a few ingredients is important when you’re trying to get a balanced meal served. No matter what you’re serving for dinner, if you can quickly make a batch of Corn Fritters you can round out a meal for your little finicky eater.

Once you learn the basics of how to make Corn Fritters, the rest is easy. You’ll want either a good heavy skillet or a deep fryer. A thermometer may come in handy, but you can also test the oil by dropping a little bit of batter in to make sure it sizzles before you begin frying an entire batch. Don’t crowd the pan with too many fritters or the temperature will drop and the fritters will get soggy and greasy. Use a good “high heat” frying oil like peanut oil, sunflower oil, or safflower oil. Be sure the oil comes up about half way on the fritters in the skillet. Follow the manufacturers guide if you’re using a deep fryer.

Making Corn Fritters requires one ingredient for sure – corn. You can use fresh corn on the cob if it’s available, or you can use frozen corn or canned corn. Some people like the flavor of creamed corn and some people prefer whole kernel corn. You’ll just need to change the amount of liquid added to the recipe to form the batter depending on which style of corn you use.

Another component to a good Corn Fritters recipe is, of course, the flour or other “sticking” ingredient. Some recipes call for cornmeal in addition to flour. Some recipes use pancake batter mix which works well, also. You can certainly experiment with these alternatives until you come up with the mixture you like.

Another option to add to your Corn Fritters recipe is an egg. You may not need to add an egg to hold your batter together, but many people prefer this method for the added nutrition. It won’t hurt to add an egg even to a recipe that doesn’t call for one.

As far as the flavors go, the skies the limit. You can add herbs, garlic, seasonings, onion, or even cheese. Some recipes call for sugar which can change the whole idea of the Corn Fritter from a vegetable to a dessert. Put a little honey alongside the fritters and watch your finicky kids devour their vegetables without a blink!

Disguising corn is only one way you can get your kids to eat their vegetables. Consider a variety of vegetables that you can turn into tasty fritters. Try a mixture of carrots, cauliflower, and other vegetables, chop them up, and turn them into “Vegetable Medley Fritters” for a change. Mix up leftover vegetables and experiment with the ingredients to create all sorts of tasty ways to sneak veggies into your child’s diet.

All’s fair in love and war, they say… and I say in feeding your kids, too. If you can disguise vegetables and get your kids to eat them, great. At some point you may want to share your Corn Fritters secret with your children, but wait until they’ve enjoyed many meals featuring your disguised veggies.
