What can one say about the modest Raspberry, except that it is scrummy, nourishing and makes the most awesome jam and cake frosting. Hands up those who have smacked their lips at the even sight of Raspberry Frosting? They also make a fantastic addition to muffins, fairy cakes and ice cream and Oh! not to forget raspberries and fresh cream with a scone or on their own. Am I making your mouth water yet?

When I think of Raspberries, I think of my gramps Ted who I adored and how I used to help him in his grand, and I mean huge vegetable and fruit garden. grandpa Ted and grannie Min had 11 children and when they grew up and got married off, they lived close by; some of them even built houses on land bought from grandaddy. Each child produced many children, quite a clan we were all fed from Granddad’s enormous garden plus his pigs, poultry and rabbits.

Anyways back to the story. Whilst granddad was not working as a Master Baker, you would come across him, in his garden or looking after the livestock. This is where I loved to come and assist, and be taught the “How To” on it all.

I recollect the Raspberry Canes, they would line 3 lines deep 2 canes per hole either side of the path to the house, which also led off to the pigs, poultry and rabbits. Each Cane standing around 6 feet. And I used to love helping grandpa stake and tie these canes before fruiting, as each one gave of its best

granddad was extremely proud of his garden; the land was rich and lush and produced only the best of produce. After each crop the ground was fed with well rotted manure and compost, dug in deep, turned 2-3 times left for a 2-3 weeks, turned again, then new crops planted in a rotation system.

I remember how It was drummed into me “Raspberry Canes, are tricky little devils, they don’t like to get soaked feet, and won’t do well if weeds tickle their legs Margie” he used to say. “Don’t tie them too tight, you will bruise the cane, just enough to give ‘em support, show ‘em love and they will yield you fruit to be proud of” was the repeated instruction every time we gave the canes support.

The Raspberry canes did show us love, with an abundance of fruit, flawlessly formed gratifying, delicious berries ready for us to pick and eat as is, or turn into something substantial and delicious like grannie Mins Double Sponge Cake which was so light, I used to guess one puff of wind and it would blow away. All filled with fresh whipped cream, layered with fresh raspberries and topped with the best raspberry frosting I have ever tasted.

gramps is long gone now, even after all this time, I still miss him at times, it is funny how memories can come bouncing back when you look, touch or smell certain things. Raspberries, those delectable berries do it for me all the time.

Oh those Raspberry canes, they kept on giving, year after year, after year.

The second way is to boil a small pan of vinegar next to the cooking cabbage and the third is to put a sieve over the boiling cabbage and put a slice of stale bread in it. These techniques work because the lemon cancels the smell of the cabbage as does the vinegar and the stale bread absorbs the smell.

Fish Fingers – it is not nice to have smelly fingers after cutting up fish, onions or garlic. As an alternative to washing and washing your hands, rub a little lemon juice on them and rinse for immediate relief.

What’s Your Favorite Fair Food? Corn Dogs!

When is the last time you and your family were at a State or County Fair? What do you remember most about your trip? If you’re like my family, it’s always about the food – the fair food, to be more specific. And, the first thing we eat when we arrive is always corn dogs!

Our State and County Fairs only come around once a year, which is way too infrequent for our love of fair food. We’ve tried to duplicate those corn dogs we get at the fair by making the pre-packaged corn dogs from the freezer department at the grocery store. Those corn dogs just weren’t the same. So, of course, we decided to get out the deep fryer and make a batch at home.

Now, corn dogs may not be the most nutritional meal on the planet. However, as far as treats go, a corn dog doesn’t have to be totally wasted calories, high in salt and sugar. The great thing about making your own corn dogs at home is that you get to control all the ingredients.

First there’s choosing a hot dog. There was a time when all hot dogs were alike. Now you can choose a hot dog made with chicken or turkey, and even a hot dog stuffed with cheese. There are organic hot dogs and vegetarian hot dogs. If you prefer not to eat pork or beef, you’ll find many options. Choices appear to be almost endless, so when it comes time to make a healthier choice, you’ll find something for you.

When it comes to the coating, this is where you can make some flavor changes, as well as healthier choices. You can choose whole wheat flour instead of white flour. You can cut back on the salt or use only the egg whites for the coating. Some pre-packaged corn dogs have added sugar, so that’s certainly something you can eliminate. Add a few herbs and seasonings for a whole new flavor and added color.

You also get to choose the oil you use when you make your own corn dogs at home. When you are at the fair, you don’t get to choose what oil they use or how long they’ve been using it. It should be about 375 degrees before you begin to fry the corn dogs. Fry a few corn dogs at a time being careful not to crowd the pot. If there are too many in the pot at one time, the oil will cool and the corn dogs will start to get soggy because they are just swimming in the oil instead of frying. Take the corn dogs out and let the oil drain off by putting them on absorbent paper spread over a cooling rack. Let the corn dogs cool a bit, then serve with ketchup, mustard, or your favorite sauce.

Apple Sauce – if you like apple sauce with your pork, bake a couple of cooking apples beside your joint of pork. Prepare and core them just as you would as if you were going to prepare them normally. Sprinkle with sugar, if you like. Then, run a knife tip around them, so that they will puff upwards, but still retain their form. Gorgeous.

Sauces – if you cannot get the sauce right, just strain it and do not tell anyone. Nobody will know the difference and what are strainers for if not straining?

Soups And Stews – if you find that you have added too much salt to a soup or stew at the last moment, do not be concerned. Put a cube of sugar in a large spoon and lower it into the liquid for twenty seconds. It will absorb the surplus salt. If you have longer, and it is appropriate, add a diced potato and it will absorb the salt too.

Pie Crust – if you need a quick, yet flexible topping for a savoury pie like chicken or beef, leave the pastry off. Take a large bag of crisps; pop the bag to let the air out and scrunch it up until the crisps are but crumbs. Pour this over your pie before you bake it. It is unusual but you can experiment with different flavoured crisps.

Chicken Breast and Leek Casserole

Casseroles are one of my favourite meals for cooking – they are really easy, provide a hearty meal and most importantly, are really healthy. Leeks are fantastic ingredients because they provide a lot of maganese, iron and vitamin C.

This recipe will be on your plate within around one hour, and will serve 4. For different numbers, just adjust the ingredients.

Ingredients

4 chicken breasts, 4 bacon rashers, a leek, 1/4 a cup plain flour, 1 tablespoon butter, 1 tablespoon of olive oil, 2 garlic cloves, 2 cups of chicken stock, 1/2 a cup white wine, 100g of button mushrooms, 100g of green beans, and a pinch of salt and pepper.

Method

1. Pre-heat oven to 180C (gas mark 4).

2. In a bowl add the flour. Then cut each chicken breast in half and drizzle with olive oil. Rub the salt and pepper into the chicken and then put in the bowl, coating each chicken breast with flour.

3. In a saucepan add the butter and place over a medium heat to melt. Remove the chicken from the bowl, shake off the excess flour and add to the pan, cooking each side of the chicken for 4-5 minutes until golden brown on each side. Then remove from the pan and put aside.

4. Prepare the leek by thoroughly washing it, then slicing. Add the leek to the pan. Remove the fat from the bacon rashers and slice into thin chunks and also add this to the pan. Stir a little before crushing in the garlic. Continue to stir with a wooden spoon until the leek becomes tender.

5. Wash and slice the mushrooms and add them to the pan. Add in the white wine and 2 cups of chicken stock. Raise the heat and bring to the boil.

6. Once boiled remove from the heat and pour the ingredients into a large casserole dish. Add the chicken breasts, put the lid on the dish and put it in the oven. Leave it to cook for 35 minutes.

7. Cut and wash the beans.

8. After 35 minutes or so add the green beans to the casserole, then place the lid back on and return to the oven for 10 more minutes.

9. Serve piping hot with thick, chunky bread rolls.
