The Vegetable Moroccan Chicken Curry with Onions, Spinach and Peas

* 1 Chicken Breast large, cut it into cubes

* of an Onion, diced, take a large onion

* Minced Garlic 1 tbsp or you could add more or less as you prefer

* 1 Bag of Fresh Baby Spinach

* 1 Cup Frozen Peas

* 1-1 Cups Chicken Broth

* 1 Cup Sour Cream or you could use yoghurt

* 2 Tbls. Curry Powder

* 1-2 tsp. Cayenne Pepper

* 1 Tbls. Turmeric

* tsp Cumin, powdered

* tsp. Cardamom

* tsp. Coriander

* 1-2 tsp. Celtic Sea Salt

* 2 Tbls. of Sesame Oil

* Handful of chopped Dry Currents use figs and raisins * Cilantro, Parsley or Mint for garnishing

Preparation:

Start with the garlic and onion, saute them in the sesame oil; use a large pan or wok for the purpose because you want all the ingredients to fit in. Once the onion and garlic are cooked, add the chicken breast pieces and cook the meat for about 3 minutes.

Turn down the heat to a medium and ad the Kashi Mixture and the chicken broth, now layer the dish with peas and spinach.

Gently fold in the sour cream or yoghurt and then add the spices including cayenne, cardamom, cumin, turmeric, coriander, curry and sea salt. Now add the chopped currents that include the figs and the raisins. Mix the ingredients gently preferably with a wooden spoon which works very well. Cook the curry on low heat for about ten minutes and don’t forget to stir periodically or you may burn it.

Garnish with chopped Cilantro mint or parsley and serve hot with flat bread like Pita or any others. If you want to make an authentic drink to wash it all down, go for sweetened mint tea. This recipe easily serves 2 to 3 people but you could always double it if you have more people coming in.

* 1/2 teaspoon turmeric.
* 1 or 2 sticks cinnamon
* 1 tablespoon honey
* 2 tablespoons sugar
* 1 1/2 teaspoons ground cinnamon
* 1 teaspoon pepper
* 1/4 cup olive oil
* 1/4 cup butter or vegetable oil
* handful of cilantro sprigs, tied together into a bouquet
* 3/4 teaspoon salt

Preparation:

It will take you about 25 minutes to get everything ready and 5 minutes for cooking the tagine. If you are cooking it in a pot you will need a large utensil which can hold all the ingredients and the aromatic juices. You could also use a pressure cooker, the meat will cook faster.

Now add the meat, garlic, onions, spices and the oil to the pan, you have to brown the meat on all sides for a few minutes with the heat at medium.
To this mixture and meat add cilantro and 21/2 cups of water, now bring the meats and the other ingredients to a quick simmer.

If you are using a pressure cooker, cover it tightly and continue cooking till the desired pressure has been reached. Now reduce the heat and cook the curry for 50 minutes with the pressure. Once the meat is cooked, you have to remove t out of the sauce and let it thicken. Reduce it uncovered till you almost all the juices are one and you can just see the oil and the onions.

If you are using a pot you will have to cook it at least for 2 and a half hours till the meat is tender.

Now you have to get the prunes ready, while you are cooking the meat, put the prunes in a small vessels and cover them with water, simmer this mixture till the prunes are tender. Normally, it should not take you more than 15 minutes to cook the prunes, now drain them and add cup of the juices reserved from the meat, sugar, honey and cinnamon, once again simmer the prune for about ten minuets
Serve the meat with the prunes on top, you could also use almonds or sesame seeds for garnishing.

Preparation: Start by heating a large pan and pouring some olive oil in it. Once the oil is hot put the chicken breasts in and brown them all over. If the chicken is ready, remove it from the pan and set it aide. Now add the onions and fry till golden brown, add some garlic and the other spices to the onion, fry this mixture for two minutes and then add the blanched chopped tomato and use saffron to season it liberally.

You will have to cook the gravy over high heat till the tomatoes soften and break down to release their juices. Once the tomatoes look cooked reduce the heat and add the browned chicken breast to the gravy. Simmer the dish for an hour till the meat is juicy and tender. Now once again you have t remove the chicken and transfer it to a serving dish.

But the sauce will have to be cooked till it caramelizes, once you get the desired consistency, add the saffron, lemon juice and the honey. Let the sauce cook for another five minutes, stir constantly to avoid burning. Finally, add a dash of seasoning and pour the prepared sauce over the chicken breasts.

The next dish is the deliciously sweet Moroccan Harost Balls made with sulatanas, dates and nuts.

100g walnuts
400g pitted dates
100g Sultanas
1-2 tbsp sweet red wine
