How To Make Sorbet In A Vitamix

Making sorbets and ice cream in a Vitamix can be very difficult. Out of all of the recipes, this can be some of the hardest to do. The reason for this is that everyone has different ice. The trickiest part is to get the ice to water ratio correct. If you have too much water, then you’ll have runny ice cream and sorbet. However if you have more ice than you should, it can get so thick that it will cause the blender’s blades to slow down, causing the fan to slow down, and causing your machine’s motor to overheat, causing the machine to shut down.

A basic rule of thumb on ice cream or sorbets is for every 1 cup of liquid, you should use about 3 cups of ice, frozen fruit, or a combination thereof. Or better stated, to create a thick frozen dessert you need to have “roughly” about 25% liquid to 75% frozen. With regards to ice, as long as the ice fits through the whole in the lid it is safe for the machine!

If you’re making ice creams and sorbets in the Vitamix, a protip would be using the tamper tool while the dessert is spinning. Using this will reduce air and frozen pockets, and will help to create a nicer flow which will cause much better consistent mixing. Vitamix machines blend up the frozen material very quickly, and it can create air pockets at the bottom of the container. What would happen in this case would be that the bottom section will be very thick and the machine won’t appear to be doing anything. During this process however, it’s breaking down the ice to a perfect creamy state, and you will see two different colors.

Contents in the Vitamix start at the bottom, move out up the sides, across the top, and then down the middle towards the blades again. If you don’t use the tamper, your frozen dessert will become too thin from the friction. If you use the tamper and constantly move it up and down and left and right all the way in the container, you’ll create a better mixture and destroy any thick air or frozen matter, and cause everything to rotate more quickly and keeping everything creamy and thick.

Keep practicing with your Vitamix and you’ll get better, and the better you are, the more you’ll enjoy your machine.
