When the butter is hot, gently tip in the eggs; as it sets, raise up the handle and draw the set mixture up towards the handle, allowing the liquid egg to run down onto the hot pan. When all the liquid is set, tilt the pan back and roll the omelette over. Serve straight away on a hot plate. It can be filled with almost anything, before being rolled over.

Pouring Custard: lightly beat 2-3 eggs for every pint of milk. Heat the milk and gradually add to the eggs; add sugar and flavouring to suit your taste; heat in a double pan or jug and hot water until the required consistency has been reached. If it is not to be served up immediately, pour a thin layer of water onto it’s surface to stop a skin forming on top.

Baked Custard: proceed as above and then pour the custard into greased dish; sprinkle with nutmeg; and place dish in water to halfway up its sides. Bake at 350 F for 35-45 mins; test by inserting a knife – it should be clean on removal.

Steamed Custard: as above, but cook in a steamer or pan of boiling water. Cooking time about the same.

Custard Tarts: pour a little pouring custard into each unbaked pastry case and bake in the oven for around 40-50 minutes. A little strawberry jam can be put in the bottom of the pastry case first, if desired.

* 2 Tbls. of Sesame Oil

* Handful of chopped Dry Currents use figs and raisins * Cilantro, Parsley or Mint for garnishing

Preparation:

Start with the garlic and onion, saute them in the sesame oil; use a large pan or wok for the purpose because you want all the ingredients to fit in. Once the onion and garlic are cooked, add the chicken breast pieces and cook the meat for about 3 minutes.

Turn down the heat to a medium and ad the Kashi Mixture and the chicken broth, now layer the dish with peas and spinach.

* handful of cilantro sprigs, tied together into a bouquet
* 3/4 teaspoon salt

Preparation:

It will take you about 25 minutes to get everything ready and 5 minutes for cooking the tagine. If you are cooking it in a pot you will need a large utensil which can hold all the ingredients and the aromatic juices. You could also use a pressure cooker, the meat will cook faster.

Now add the meat, garlic, onions, spices and the oil to the pan, you have to brown the meat on all sides for a few minutes with the heat at medium.
To this mixture and meat add cilantro and 21/2 cups of water, now bring the meats and the other ingredients to a quick simmer.

If you are using a pressure cooker, cover it tightly and continue cooking till the desired pressure has been reached. Now reduce the heat and cook the curry for 50 minutes with the pressure. Once the meat is cooked, you have to remove t out of the sauce and let it thicken. Reduce it uncovered till you almost all the juices are one and you can just see the oil and the onions.

If you are using a pot you will have to cook it at least for 2 and a half hours till the meat is tender.

Now you have to get the prunes ready, while you are cooking the meat, put the prunes in a small vessels and cover them with water, simmer this mixture till the prunes are tender. Normally, it should not take you more than 15 minutes to cook the prunes, now drain them and add cup of the juices reserved from the meat, sugar, honey and cinnamon, once again simmer the prune for about ten minuets
Serve the meat with the prunes on top, you could also use almonds or sesame seeds for garnishing.
