Summertime grilling memories usually involve a lot of meat, mostly centering on steak and burgers, but there is no reason to stop there. The world is full of other options that can make your grilling occasion even more fun, as well as a lot healthier, too. Let us take a look.
Grilled vegetables are a lot better for us than potato salad, chips, and burgers – the usual cookout fare. You can serve veggies on their own, or along with your usual grilled foods to add a little something different to your meal. From peppers and corn to tomatoes, eggplant, onions, and squash, there are all kinds of veggies out there that will be great on the grill.
Corn makes a particularly nice choice for the grill, since the husk it grows in quickly turns into a convenient wrapper that will steam the ear for you. Take out the silk without removing the husk completely, soak the cob, then wrap yours back up, and place it on the grill. The corn then steams itself. Serve with butter and other seasonings to see this veggie disappear fast.
Try tomatoes over the coals, as well. While they do not seem like a choice that is made for grilling you will be surprised by how well they actually do. Cut in half and cooked with oil, cut side down, tomatoes are a taste treat that takes only a little while and cook. Just do not overdo it, or yours will be mush.
Mushrooms do extremely well when you cook them on the BBQ, too. This is a method of cooking that helps them taste their best, especially if you use a tasty marinade. Try a salty, sweet type, and cook whole mushrooms right on the grate, with little ones placed in a grill basket. You will be surprised by how good they can be.
Remember that not every vegetable grills gracefully, of course. Leafy greens like cucumbers, celery, lettuce, and others have too much water and too little sugar. They will tend to shrivel and stick, instead. However, there are a few vegetables that might not seem worth grilling, but have surprisingly good results.
You might not expect that baby bok choy, cabbage and other similar goods would grill as well as they do, but with a strongly flavored sauce, they are something you just cannot beat. Try asparagus, too, and cook eggplant with a strong oil to bring out a new smoky taste.
Try other common veggies, such as hot and sweet peppers, summer squash of every kind, onions, leeks, and other alliums, and more. Even starchy vegetables are great on the grill. They take a little longer unless cut into pieces, but you will get great results from sweet potatoes, white potatoes, carrots, radishes, turnips and beets. Take a little bit of time to try out something new and see how good the results can be.
