Asparagus Dishes – Information On Asparagus And How To Prepare Them

Asparagus is available in a few types and probably the green and white asparagus are the most popular and one can easily buy them from the market. There is another not so common variety of asparagus that’s purple in color, although its not easy to find. White asparagus is essentially green asparagus that has been grown without light . Light lets chlorophyll produce the green pigments that give green asparagus its vibrant color. White may have a milder taste than its green counterpart but either of them could be used in an asparagus recipe.

ASPARAGUS SEASON In most areas, asparagus season is April through May. In the west coast it can begin in February and in the east coast it can run through July.

THE BEST ASPARAGUS Asparagus which have thick stalks aren’t ideal for cooking, so do examine the stalks before you purchase. Ideally the stalks should be no thicker than a pencil and must also be relatively firm and erect while the tips should ideally be slightly purple and pointing inward.

STORAGE TIPS Asparagus must be stored in a cool place away from heat. As soon as you get it from the market wrap it in a moist paper or towel and place it in the refrigerator.

HOW TO PREPARE ASPARAGUS FOR COOKING Remember, asparagus is basically grown below the soil, so it is especially vital to clean it in cold water before you start cooking. Look for rigid ends and cut them. Blanching and steaming of asparagus must be followed by immersing them in cold water in order to preserve their green color.
